New Pacific Northwest restaurant opens in downtown Spokane

SPOKANE, Wash. — A new restaurant celebrating Pacific Northwest flavors and Spokane’s local culture has opened in downtown Spokane.

Lilac & Pine opened inside the Davenport Grand Hotel, taking over the space previously occupied by Table 13. The restaurant was designed to highlight local influences and showcase the spirit of the Spokane community through its menu, design and partnerships.

“It has been really cool developing it with our team here—celebrating the Spokane area and the Pacific Northwest—and incorporating as much as we can, with some smoky elements,” said Chef Rudy Velasquez. “Giving it that Northwest feel, while still appealing to the average traveler.”

The menu features elevated comfort cuisine with dishes ranging from cedar roasted King Salmon and pine-smoked steaks to Dungeness crab rolls and black garlic flatbreads. Chef Velasquez created the menu to celebrate Pacific Northwest flavors through thoughtfully sourced regional ingredients.

Lilac & Pine has partnered with Spokane-based companies to create unique offerings. The restaurant developed exclusive house spice blends in collaboration with Spiceology specifically for the restaurant’s culinary vision. The establishment also features collaborations with Dry Fly Distilling for its handcrafted cocktail program.

“Lilac & Pine was created to feel distinctly Spokane,” said Melissa Green, VP and Area Managing Director. “From the menu and design to the custom artwork and local partnerships, every detail was thoughtfully crafted to celebrate the spirit of the Pacific Northwest and the local community.”

The restaurant offers signature desserts including the Pine & Ember “S’mores” Duo, featuring salted vanilla and peanut brittle ice cream, torched marshmallow, cocoa nib tuile, warm chocolate sauce and Davenport’s signature peanut brittle crumble.
