Pinterest:Impossible – Pumpkin Spice Cookies

I have a niece. She’s four, and adorable.

Trust me, if you met her, you’d think she’s adorable too.

She’s started wanting to help out in making things in the kitchen. This works well for me, cause I like to make things in the kitchen, AND I like to hang out with her.

Total win-win.

So the other day I decided to make pumpkin spice cookies, because it’s Fall and pumpkin is everywhere and I bought a giant can of it while making pumpkin turkey chili and it turned out we already had cans of pumpkin so there was a lot left over.

Pumpkin spice cookies seemed like a pretty good use of the extra pumpkin.

My niece agreed. So we got out the ingredients from the cupboards (she carried the can of pumpkin, it was a big deal) and then she got her little stool so she could see everything on the counter, and we proceeded to make a giant mess all over the kitchen.

I’d like to say my niece wasn’t covered with cinnamon and flour and sugar by the time we were done, but that would be a lie, so I won’t say it.

Instead I’ll say that the recipe I chose was relatively simple, and had the normal fun ingredients: pumpkin, cinnamon, nutmeg, ginger, sugar, and flour. I used pretty much everything as stated, though am just realizing as I’m writing this and looking over the recipe again that I missed the ginger. That may have been a bit noticeable, flavor-wise.

The recipe also had an add-on recipe for cream cheese frosting, but we were going with what we had on hand, and that did not include cream cheese. So we skipped the frosting altogether.

The cookies really didn’t need it. They were sweet and soft and moist all on their own. I let my niece mix the batter several times during the baking process, so the cookies also ended up with a few surprising pockets of cinnamon.

I think it just made them more interesting.

Honestly I never expected this Pinterest:Impossible baking experience to be that impossible. I’ve made pumpkin spice cookies before (even if I used a slightly different recipe) and so I had a good idea what to do. I just liked having the opportunity to make something tasty with my fave four-year-old.
So on multiple accounts, I am definitely calling this Pinterest:Impossible experiment a WIN.
