
SPOKANE VALLEY, Wash. – A new market on East 8th Avenue is set to become a hub for local bakers, growers, and coffee roasters.
Tiffany Cable, owner of The Blissful Whisk, closed her shop in March to serve her former customers at this new location.
“I just needed to reduce my overhead,” said Tiffany.
She plans to use the market’s kitchen and offer her baked goods year-round.
The site, once a quarry, has been transformed and is expected to generate more than $14 million annually.
“There’s just going to be so many opportunities here that I didn’t have in my brick and mortar location,” Tiffany added.
The market provides convenience for local farmers and is a resource for families seeking healthier, cost-effective food options.
Brittany Tyler, CEO and owner of 4 Roots, emphasized the benefits, stating, “Having access to fresh, nutritious local food on a year-round basis really opens a lot of doors.
It lowers a lot of barriers to food security and food access for our community.” The market also offers an entry point for farmers to expand access to their products.
“Having an extra place here where they can not only scale up their operations and find a new sales channel, but really access direct contact with their community, it just provides a whole new realm of possibility,” Brittany said.
Tiffany is excited about the proximity to local farmers.
“The fact that the farmers will be right here so we can get fresh produce from them and stuff like that I think will be a definite benefit to my products,” she said.
Reflecting on the market’s opening, she remarked, “To see it come to fruition is it’s surreal. It’s definitely one of those pinch me moments.”
